Nestled at the southern end of the Barossa Valley, near the boundary of the Adelaide Hills, is Aldo’s Vineyard. This single vineyard is planted on a deep silty grey loam overlaying a yellow clay and produces Mataro with complex spice and aromatic intensity.
Fruit was hand-harvested on the 24th March 2021 and fermented with 25% whole bunches to create a vibrant style. After 8 days on skins the wine was pressed off skins to another tank to complete fermentation. Once complete the wine was left to settle for several days before racking to seasoned wood for natural malolactic fermentation. After 10 months in oak the wine was blended and bottled without fining or filtration in January 2022.
144 cases produced.
